Amber Ale Pancakes
You can use any beer for this. I really liked the amber ale because it gave the pancakes a light malty flavor. Hefeweizen or brown ale would be good.
Makes about 16- 4 inch pancakes
Ingredients:
2 cups all purpose flour
2 Tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon baking soda
1 large egg
3 Tablespoons unsalted butter, melted
2 cups of beer
¼ cup of spent grain (tightly packed), optional
1 to 2 teaspoons of vegetable oil for griddle
Directions:
Whisk all dry ingredients together in a large bowl. Whisk all wet ingredients together in medium bowl along with spent grain if using. When the griddle is warm gently whisk wet ingredients in dry (a few lumps will remain) and immediately poor on griddle. Cook like you would any pancake batter.
